Hi friends! Keeping it simple, as always, with my cooking. Most of my recipes are from skinnytaste (if you’ve seen my previous meal plans, then you know how much of a fan I am!). I recommend her cookbooks (The Skinnytaste Cookbook and Skinnytaste Fast and Slow) as well as her weekly meal planner. You won’t be sorry!
Here’s the plan for this week!
THE MEAL PLAN
MONDAY: Crockpot Balsamic Chicken
Look familiar? Yeah, this is such a hit in my home of picky eaters that I literally throw it in my meal plans every other week!
Reminder: I leave out the rosemary and thyme because picky eaters, but it’s still reallyyyy good without it. Also, I buy shredded mozzarella and sprinkle it over the top when it’s done cooking.
I usually pair with steamed vegetables (you know, the frozen kind that you steam in the bag that they come in – ain’t nobody got time to steam veggies on the stove).
Hey: You may have some chicken left over with this. I only make enough for that one night because we don’t like how leftover chicken tastes.
This Tuesday is our Monday (for many of us). I need something quick and easy. Mondays are hard enough as it is, man!
WEDNESDAY: Hellooooo Leftovers! (From Tuesday night)
Yeah, it’s a short week. But don’t they always feel longer than regular weeks somehow? Anyway, we made it half way through the week. Celebrate!
THURSDAY: Baked Chicken Parmesan with Steamed Veggies
Healthier than frying on the stove and still delicious! I have a bag of frozen veggies that I’ll be popping in the microwave as a side.
Or delivery. Whatevs.
SATURDAY: Jake’s 4th Birthday Party! We’ll be BBQ’ing!
Cheeseburgers and hot dogs. Doesn’t get easier than this! Especially when Adam and my dad are manning the grill 😉
This is one of Adam’s favorite appetizers from Cheesecake Factory. It’s the first time I’m attempting this at home – fingers crossed! Looks easy enough, though… we’ll see.
