Its hard to believe its Sunday again already!
I am finally 100% ready to start leading a healthier lifestyle again. I’ve been half way there for the last few months, and so has my effort.
But now is the time!
For me, the keys to success are planning and simplifying. If I don’t have something planned for breakfast, lunch, and dinner during the week then I will without a doubt pick up fast food or snack on junk food. And if the recipes are too complicated or time-consuming, then I won’t make them and I’ll again resort to fast food.
I’ve already gotten into the habit of planning our dinners so that we don’t eat out as much. Now I’m going to throw in breakfast and lunch – but to keep it simple, I’m going to have the same thing for breakfast and lunch all week. Boring, I know, but effective nonetheless.
For breakfast, I’m making overnight oats. I’m finally going to use the mason jars that I bought 6 months and that my husband loves to rub in my face as one of my pointless purchases! Pointless, no more! Overnight oats will last in the fridge for up to 5 days in an air tight container so I’m going to make jars for Monday through Friday. Just keep in mind that the longer they soak, the creamier they will be.
For lunch, I really want to start making mason jar salads. I’ve done this before and they are so easy and so good. But I’m going to work my way up to that. Baby steps here, people. I don’t want to give up before I even begin. For this week, I’m keeping it super simple with turkey sandwiches on whole wheat bread.
Here’s what’s for dinner! This week is ridiculously easy – I’m only cooking a few times this week! WHAT!
The Meal Plan
Monday: Skinny Baked Macaroni and Cheese
I stick to this recipe as is. It’s easy, fast, vegetarian, and kid-friendly. Perfect for a Monday night!
Tuesday: Pesto Chicken Bake with Roasted Asparagus
I LOVE chicken bake recipes. They’re easy to make, easy to clean up, and they always come out great! I use shredded mozzarella cheese instead of slices of cheese.
There are a few variations included with the asparagus recipe – I’m opting for the lemon because it sounds refreshing! A good choice for spring.
Wednesday: Leftovers, of course! Skinny Baked Macaroni and Cheese
As I always say, we made it half way through the week – we deserve a break!
Thursday: Simple & Easy Stuffed Peppers
I haven’t tried this recipe before, but I imagine its hard to mess up! No rice in these stuffed peppers. Although I like ground turkey and it’s a healthy choice, I substitute it with ground beef because… uh, you guessed it – my picky husband won’t eat ground turkey 😉
Friday: Leftovers! Simple & Easy Stuffed Peppers
Its the holiday weekend! I give you permission to not cook and enjoy BBQs for 3 days!
Saturday & Sunday: BBQ Galore!
We’ll be heading BBQs on Saturday and Sunday. Love weekends like these and I’m so thrilled that summer is finally here!
