Hi friends! Keeping it simple, as always, with my cooking. Most of my recipes are from skinnytaste (if you’ve seen my previous meal plans, then you know how much of a fan I am!). I recommend her cookbooks (The Skinnytaste Cookbook and Skinnytaste Fast and Slow) as well as her weekly meal planner. You won’t be sorry!
Here’s the plan for this week!
THE MEAL PLAN
This is a great way to sneak in veggies! Quick and easy – especially if you buy the veggies already sliced.
TUESDAY: Chicken & Broccoli Stir Fry
I love Chinese food, but take out isn’t an option for us right now (we’re in money saving mode!). I’m really excited to make this. Plus it’s a much healthier version than take out.
WEDNESDAY: Hellooooo Leftovers! (From Monday night)
We made it half way through the week. Celebrate! Kick your feet up with a glass of wine and tell your hubby to heat up some leftovers 😉
THURSDAY: Hot Dogs and Instant Pot Brown Sugar Baked Beans
I know hot dogs aren’t the healthiest, but they’re so easy! I’m traveling for work on Wednesday and I KNOW I’m not going to want to make anything special on Thursday. The baked beans recipe is new for me, and Adam is a big fan of baked beans so we’ll see what he thinks!
Or delivery. Whatevs.
SATURDAY: Slow Cooker 3-Bean Turkey Chili
I love ground turkey and its really good in this dish. However, Adam swears he can taste the difference between ground turkey and ground beef, and the ground beef wins. So I’ll substitute the turkey with beef.
SUNDAY: Leftovers from Saturday night
I hope this meal plan saves you some time! Have a great week all!
